APPLE & PECAN CINNAMON BREAD


I've spent a lot of time & money trying to master gluten free bread. Yeasted, sourdough, every bread mix under the sun but have never produced anything worthwhile! Have finally accepted, much like growing plants, bread making is sadly not my thing.
However this apple & pecan loaf, although not bread in the traditional sense, I can do. The best way I can describe it is somewhere between bread and cake!



180g grated apple flesh (eating apple, not cooking.)
100g dairy free spread eg flora

250g doves farm self raising gluten free flour ( or similar)
2 heaped teaspoons cinnamon
3 eggs
100g pecans (or walnuts)
1 tablespoon coconut sugar or soft brown sugar

1 Preheat the oven to 180c

2. Place the pecans in a blender & blitz. Add the apple, dairy free spread, eggs & sugar. Blitz.

3. Fold in the flour & cinnamon.

3. Grease or line a 1 lb loaf tin.

4. Pour the mixture into the tin.

Bake in the centre of the oven for 70 mins until it's firm to the touch and the top has browned.
Leave to cool, then slice.

Serve with butter & jam or nut butter.
